Traditionally baked on the premises of a beef patty shop, coco bread has always been the perfect go to when you need to cool down those taste buds after a bite into a delicious, spicy beef patty. All you need is flour, coconut milk, butter, yeast, and sugar.
Why is the Jamaican Bread called Coco Bread?
This bread in particular is called Coco bread because it has a sweet, mild, coconut flavor that comes from the coconut milk that is added to the ingredients. Once you take a bite into the Coco bread, you’re immediately greeted by a warm, creamy taste with undertones of coconut. Baked fresh, the Coco bread is definitely a crowd pleaser!
Ingredients
-3 cups All Purpose Flour
-1 packet of active dry yeast (dissolved into 1/4 cup of warm water & 1 tsp sugar)
-3/4 cup of Unsweetened Coconut Milk
-3/4 cup of Sugar
-3 tbsp unsalted butter
-1 tsp Salt
-4 tbsp melted butter
Directions
Preheat your oven to 350 degrees. The first thing you should do is prepare the yeast. Dissolve one packet of yeast into 1/4 cup of water with 1 tsp of sugar. The water should be warm first. Warm the water to approximately 100 degrees Fahrenheit. Once you add the yeast and sugar, let it sit for approximately 15 minutes. You’ll see the yeast activate and rise. In a medium sized bowl, add your flour and butter. The butter should be room temperature. Knead the butter into the flour with your hands. Next add the sugar, salt, and stir. Use warm coconut milk. It should be lukewarm and around 100 degrees Fahrenheit. Add your coconut milk and yeast mixture. Knead the dough until you have a round mound of dough. Cover and let it sit for a minimum of 1 hour. Lightly dust your counter and using a rolling pin, knead your dough flat. You can make approximately 6 small coco breads, or two large loafs of bread. Using a knife, section off pieces of dough. Grab your melted butter and brush the dough. Fold the dough onto itself and brush with melted butter. Fold again to create another layer and brush each later with melted butter. Once you’re done, you can brush the outside with melted butter. Place the coco bread on a baking sheet with parchment paper and bake for 45 minutes. Remove from the oven and brush with melted butter. Allow 15 minutes to cool and enjoy!
