Easy Jamaican Oxtail Ramen Recipe

What’s With the Latest Ramen Craze?

My kids are huge anime fans and I’m not sure if that’s got anything to do with it, but it’s rising popularity, fueled my social media and content about “pimping your ramen” has kicked the love of ramen into overdrive. Ramen restaurants have been popping up in every major city, made attractive by self-serving, customizable toppings like sweet corn, bok choy, kimchi, soft boiled eggs, and cheese.

What is Jamaican Oxtail Ramen?

Jamaican oxtail ramen is a fusion dish inspired the best parts of two cultures. Jamaicans are famous for making the best oxtail in the world, and ramen is a staple in Asian culture. The oxtail is made Jamaican style, with browning, scallion, onion, garlic, and thyme in addition to dry seasonings. The broth is then used as a flavorful base for the ramen.

Ingredients for Jamaican Oxtail

  • 3 lbs of oxtail, trimmed
  • 1 tbsp of All Purpose seasoning
  • 1 tsp Oxtail seasoning
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Soy Sauce
  • 1 tsp Lee Kum Kee All Purpose Marinade
  • 1 tsp Browning
  • 1/2 onion, chopped
  • 1 scallion
  • 5 garlic cloves
  • Few sprigs of thyme
  • 1/4 cup of Turbinado Brown Sugar
  • 1/4 cup of neutral oil (corn, canola, vegetable, etc)
  • 5 cups of water

Ingredients for the Ramen

  • 1/2 lb of Baby Bok Choy
  • 1 tbsp Chili Crisp Oil
  • 1/2 tbsp Miso Paste
  • 1/2 tbsp Gojuchang
  • 2 packs of Ramen Noodles
  • 1 cup of broth from the Oxtail
  • 1/4 cup of unsweetened Coconut Milk

Directions

Step 1: Wash and trim excess fat from oxtail.

Step 2: Add all purpose seasoning, oxtail seasoning, onion and garlic powder, soy sauce, and all purpose seasoning as well as chopped onion, garlic, scallion, and thyme. Massage seasonings into the oxtail.

Step 3: Place a medium sized Dutch pot on medium flame. Add your oil and heat for one to two minutes. Next, add your brown sugar and stir until it melts and becomes slightly foamy, yet still brown.

Step 4: Now add in your oxtail and using a spoon, stir the oxtail so that all pieces are coated with the caramelized brown sugar. Cover and allow to simmer for 30 to 40 minutes, stirring occasionally.

Step 5: Add 5 cups of water to the pot, along with a teaspoon of all purpose seasoning, oxtail seasoning, and onion and garlic powder. Cover and maintain a medium heat for at least an hour. After an hour, the oxtail should be tender and gently pulling away from the bone. If it is still tough continue simmering for another 20 to 30 minutes. It is OK to add extra water if you see your broth evaporating.

Step 6: Place a small stock pot on low to medium heat and add your chili crisp oil, your miso paste, and Gojuchang paste. Sauté for one to two minutes.

Step 7: Add one cup of broth from your oxtail pot along with your coconut milk. Next add 5 cups of water. Bring it to a slow rolling boil and add two packs of Ramen noodles along with your baby bok choy. After 10 minutes your noodles should be cooked and you can serve it with whatever toppings you like.
