These Caribbean Style Stewed Turkey Wings are tender, flavorful, and perfect for Sunday dinner, holidays, or whenever you need a plate that feels like home.
What Are Caribbean Stewed Turkey Wings?
Caribbean stewed turkey wings are turkey wings seasoned generously with herbs, spices, and browning sauce, then seared and simmered in a rich, savory gravy until fork-tender.
Unlike baked turkey wings, this method creates:

• A thick, savory gravy
• Fall-off-the-bone tenderness
• That unmistakable Caribbean taste
Ingredients for Caribbean Style Stewed Turkey Wings
For the Turkey:
3–4 lbs turkey wings (whole or split)
2 tsp all-purpose seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
½ tsp black pepper
1 tsp dried thyme (or 2 sprigs fresh thyme)
1 tbsp green seasoning
1 tsp Chicken Seasoning
For the Gravy
-5 cups of Water
-2 large spoonfuls of Tomato Paste
-1 tsp Onion Powder
-1 tsp Garlic Powder
-1 tsp All Purpose Seasoning
-1 tsp Chicken Bouillon
1 small onion, sliced
1/4 Red Pepper, sliced
1/4 Green Pepper, sliced
1/4 Yellow pepper, sliced
6 cloves garlic, minced or finely chopped
How to Make Caribbean Stewed Turkey Wings
1. Wash and Prep the Turkey
Rinse turkey wings with water and lime or vinegar then pat dry. Turkey wings sometimes contain large feathers. Pluck them before seasoning.
2. Season Generously
In a large bowl, combine turkey with:
- All spices listed above
- Green seasoning
Massage everything into the meat thoroughly.
Pro Tip: Let it marinate at least 4 hours — overnight is best for maximum flavor.
3. Brown the Turkey Wings
Heat oil in a large heavy-bottom pot over medium heat.
Add turkey wings to the pot and quickly sear them by stirring repeatedly. Cover and turn the fire down to low/medium. This will allow the turkey to spring its own juices. Stir occasionally and once liquid has almost evaporated (don’t allow all liquid to evaporated. Leave some for flavor) It’s time to build the gravy and allow it to stew.
4. Build the Gravy
Add the tomato paste, onion, garlic, scallion and peppers. Stir. Add 5 cups of water along with the seasonings listed above and cover.
5. Slow Simmer Until Tender
Cover and place on medium heat.
Simmer for 1 hour minimum, stirring occasionally, until:
- Turkey is fork-tender
- Gravy has thickened
- Oil slightly rises to the top (a sign of proper stew development)
Tips for the Best Brown Stew Turkey
✔️ Don’t skip that initial sear. That caramelization makes the gravy rich.
✔️ Marinate overnight because it makes a huge difference.
✔️ Use fresh ingredients if possible. The flavor is brighter.
✔️ Keep the Scotch bonnet whole – You’ll get flavor without overwhelming heat.
✔️ Low and slow wins – Turkey wings need time to become tender
