Easy Honey Buttermilk Cornbread

I can eat cornbread all year round. Yup, it’s that good. I developed this recipe a couple of years ago because I was searching for a cornbread recipe that was quick, easy, and approachable. I don’t know anybody that doesn’t like cornbread! It’s the perfect side to any dish: soups, stews, chilis, and it definitely deserves a spot on your holiday menu.

What does Buttermilk do to Cornbread?

Buttermilk helps to create a fluffier, more moist cornbread. It’s slightly tangy, and makes cornbread taste a lot creamier. The addition of buttermilk to baked goods tends to yield a tender, tastier flavor profile.

Can I Make a Buttermilk Substitute for Cornbread?

Yes! If you plan on making cornbread and can’t get your hands on buttermilk, you can add 1 tbsp of lemon juice or vinegar to 1 cup of milk. Let it sit for 10 minutes and then use it. Slight curdling will occur and that is absolutely fine. Just stir well before.

What Ingredients do I need to make Honey Buttermilk Cornbread?

Unbleached all purpose flour, quality buttermilk, (I use Kate’s), fine cornmeal, sugar, baking powder, eggs, butter, and honey. When purchasing ingredients to make cornbread, select quality ingredients. Purchase real butter as opposed to margarine or a vegetable oil spread.

What can Honey Buttermilk Cornbread be eaten with?

Ingredients

1 1/2 cups of all purpose flour

1 1/4 cups of fine cornmeal

1/2 cup of sugar

1/2 tbsp baking powder

2 eggs

2 sticks (16 tbsp) of salted butter

1 cup of buttermilk

3 tsp of honey

Directions

Preheat your oven to 350 degrees. In a small saucepan, melt 2 sticks of salted butter and set to the side. In a medium sized mixing bowl, add all purpose flour, fine cornmeal, sugar, and baking powder. Stir with a spatula or whisk. Using your mixer, slowly incorporate the melted butter. Ensure the mixture is well incorporated before adding each ingredient. Next, add your eggs. Last, add your buttermilk and honey. Mix until all ingredients are well incorporated. Add to an 8×8 baking dish and bake for 50 minutes. Check for readiness by inserting a knife or toothpick. If it comes out clean, it’s ready! Drizzle honey on top, and enjoy!
