What Type of Chicken should I use for Chicken Wings?
When it comes to selecting the right chicken when you’re making chicken wings, it all comes down to preference. You can select a bag of frozen party wings or you can purchase whole chicken wings. It’s easier to cut whole chicken wings in half and separate the drum from the flat.
What’s the Secret to Jerk Chicken?
The secret to jerk chicken lies in the marinade. Fresh thyme, allspice berries, scallion, scotch bonnet peppers, and ginger. You can make your own jerk seasoning from scratch, but a store bought marinade will definitely get the job done.
How Long Should you Let Jerk Chicken Marinate?
The ideal time for marinating jerk chicken depends on the individual. If you have the time, marinating overnight is optimal. If you’re short on time, 3 hours is perfect, and if you’re so hungry you can’t wait, then you can cook right away without sacrificing flavor!
Ingredients
- 5 lb of Chicken Wings
- 1 tsp All Purpose Seasoning
- 1 tsp Chicken Seasoning
- 1 tsp Dry Rub Jerk Seasoning
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 1/2 tsp Paprika
- Juice of half sour orange or 1 tbsp of sour orange mix
- 2 tsp Cornstarch
- 5 tbsp of wet Jerk seasoning (mild or spicy)
- 8 tbsp of Sweet & Spicy or Sweet & Savory sauce (I used Momofuku’s Sweet & Savory Korean BBQ sauce)
Directions
Using a medium sized bowl, add your all purpose seasoning, chicken and jerk seasoning, onion and garlic powder, paprika, sour orange, and cornstarch. Massage the ingredients until well incorporated. I used an indoor grill to cook these wings. Link to my recommended indoor grill: https://amzn.to/40k4Uh5 I set the grill to 375 degrees and grilled for 25 minutes on each side. Use your sweet and spicy sauce as a finishing sauce and drizzle on top when you’re done.
You can also bake these wings on 375 degrees covered with aluminum foil for 1 hour. Remove the foil, add your sauce on top of each wing and place it back into the oven uncovered for 15 minutes.
