September 24, 2024 By The Cooking Nurse 2 Comments

I have been making this banana bread recipe for the past 5 years. It’s moist, delicious, and goes perfect with your morning coffee or tea. To jazz it up, I like to spread nutella on a slice for a delicious treat. Once you try this banana bread recipe, let me know how you like it!

The best Bananas for Banana Bread

You’ll want to choose bananas that are overripe to make this banana bread recipe. The bananas you select should have black spots over the majority of the skin, and should be slightly soft to touch. This guarantees a sweet and rich flavor for your banana bread that is sure to please!

How to Mash Bananas

This simple recipe requires no equipment! The bananas you select for the recipe will be soft already so all you need to do is mash the bananas with a fork. Once you add the wet ingredients, the bananas will get even softer. Once you mash the bananas with a fork, you can also use a whisk to stir it.

How to Make Banana Bread

You’ll find the recipe below, but here is a brief overview and the concept on how to bake banana bread. You’ll need two mixing bowls. One for the dry ingredients and one for the wet ingredients. Sugar is technically dry, but it goes into the bowl that contains the moist ingredients. You’ll also need a standard loaf pan to pour the mixture. The cream cheese mixture is made separately and then swirled into the banana bread mixture.

How to make Banana Bread moist

The secret to making this banana bread incredibly moist is using brown sugar, which is more moist compared to granulated sugar and covering your loaf pan with foil while it cools. The condensation that occurs when the heat is trapped makes the top layer of the banana bread super moist.

Banana Bread Ingredients

2 large over ripe bananas, mashed

2 cups self rising flour

1/2 cup granulated sugar

1/2 cup brown sugar

1/2 tsp salt

3 eggs, beaten

1/4 cup vegetable oil

1 tosp vanilla extract

1 tsp ground nutmeg

1 tsp cinnamon powder

1 tsp almond essence

For cream cheese swirl:

4 oz cream cheese

1/4 cup granulated sugar

1 large egg yolk

1 tsp almond essence

1 tsp vanilla extract

Directions

Preheat oven to 350 degrees.

You’ll be needing 2 large mixing bowls. In one bowl, mix mashed bananas, granulated sugar, brown sugar, vanilla, almond essence, nutmeg, and cinnamon powder. Add beaten egg and vegetable oil. In another bowl mix flour an salt together. Using a hand mixer or whisk, slowly add the banana mixture to the flour and salt and mix until smooth.

Add to a greased loaf pan or non stick loaf pan. If using a pyrex, generously spray with Pam baking spray

Now mix cream cheese, egg yolk, vanilla, & almond essence in separate bowl and swirl throughout mixture. Bake for approximately 1 hour or until a toothpick or knife comes ol clean after inserting. Enjoy!
