It doesn’t have to be Valentine’s Day or around the holidays in order to enjoy red velvet cheesecake brownies. This recipe is perfect for an office potluck, a get together with friends, a treat for yourself, or just something you want to bake for that special person. The addition of the Bailey’s Irish Cream Liqueur adds a nice grown up taste to it, but if you’d like to omit it and make a sober red velvet cheesecake brownie, then that’s also fine as well!

Whoever thought to merge these three desserts and create this is a genius because I love red velvet cake, I love a good fudge brownie with a crispy edge, and who doesn’t love cheesecake?
What ingredients are in Bailey’s Red Velvet Cheesecake Brownies?
In order to make Bailey’s Red Velvet Cheesecake, you’ll need butter, unsweetened cocoa powder, granulated sugar, vinegar, vanilla extract, salt, all purpose flour, red food coloring or red gel food coloring, cream cheese, eggs, an 8×8 baking dish, and non stick baking spray.
Ingredients
These are the following ingredients for the red velvet brownie layer:
-1 stick of Butter (8 tbsp)
-2 Eggs
-1 cup Granulated Sugar
-1 1/2 tsp of Red Gel Food Coloring
-1/4 cup of Unsweetened Cocoa Powder
-1/2 tsp Salt
-2 tsp Vanilla Extract
-3/4 tsp Vinegar
-3/4 cup All Purpose Flour
Bailey’s Cheesecake Swirl:
-1 Brick (8 oz) of Full Fat Cream Cheese
-1 shot (1.5 oz) of Bailey’s Irish Liqeuer
-1 Egg Yolk
-1/4 cup Granulated Sugar
-1 tsp Vanilla Extract
Directions
Preheat your oven to 350 degrees Fahrenheit. Beat 2 eggs and set them aside. In another bowl, melt your butter in the microwave, remove and add cocoa powder and stir. Add in 1 cup of granulated sugar, vanilla extract, red food coloring, vinegar, and salt. Use a whisk and stir. Gently fold in the all purpose flour with a spatula and make your cheesecake layer.
Make sure your cream cheese is softened. It makes it easier to work with. In a small bowl, add the cream cheese, a shot of Bailey’s (you can omit if you choose) the egg yolk, vanilla, and sugar. Whisk until incorporated.
Next, pour your brownie batter into your 8×8 dish, and using a knife, marble the cheesecake mixture into the brownie mixture. You can add as much or as little as you like into your brownie mix. I used only half of the cheesecake mixture and it came out perfectly. Place in the oven and bake for 30-35 minutes. Ensure a toothpick comes out clean when inserted before removing. Allow to cool for 15 minutes and serve!
