I bet you didn’t know you could use Guinness to make a delicious, hearty beef stew! Yep, you most definitely can. Coming from a Jamaican family, I was always accustomed to seeing Guinness consumed as a beverage at a party or being made into a delicious drink called Guinness Punch. This Irish inspired beef stew is a little different, but it is so delicious.
My St. Patrick’s Day celebrations used to include hanging out with friends, but these days I am cozying up on St. Patrick’s Day with a nice bowl of hearty Guinness beef stew. My, how times have changed! This Irish inspired Guinness Beef Stew can be consumed year round, so no worries!
What is Guinness Beef Stew?
Guinness Beef Stew is made of tender pieces of beef chuck that are braised, then stewed in a rich sauce containing tomato paste, herbs & spices, carrots, celery, beef broth, and Guinness beer. It can be made in an instant pot, slow cooker, or on stovetop. My preferred method of making Guinness Beef Stew is in a sturdy dutch oven pot and slow cooking it. What will I need to make Guinness Beef Stew?
I suggest buying a family pack of beef chuck that is cut into cubes. You could also buy a large beef chuck steak and cut it yourself, but save time by buying the beef already precut. You’ll also need celery, carrots, onion, garlic, beef broth (I chose the low sodium option), a 14.9 fl oz can of Guinness Draught Stout, tomato paste, and bay leaves. This recipe also uses onion & garlic powder, all purpose seasoning, herbs de provence, and dried oregano.
What can I eat with Guinness Beef Stew?
This Irish inspired Guinness Beef Stew is served with mashed potatoes, but you are free to add vegetables of your choice, or even roast your potatoes. If rice is something you’d like, then totally go for it!
Ingredients
-3 lbs Beef Chuck Stew
-1/2 tbsp Salt
-1 tbsp Ground Black Pepper
-2 tbsp All Purpose Flour
-1/4 cup of Canola Oil
-2 Celery Stalks, sliced
-2 Carrots, peeled and cut into rounds
-1 large spoonful of tomato paste (approx 1/3 cup)
-8 oz Guinness Draught Stout
-3 cups Low Sodium Beef Broth
-2 Bay Leaves
-1/2 Onion, chopped
-6 Garlic Cloves, finely chopped
-1/2 tbsp All Purpose Seasoning
-1/2 tbsp Onion Powder
-1/2 tbsp Garlic Powder
-1/2 tbsp Meat Seasoning (any brand)
-1/2 tbsp Herbs de Provence
-1/2 tbsp Dried Oregano
-1/2 tbsp Garlic Scallion seasoning (or Mrs. Dash Garlic & Herb Seasoning)
Directions
Rinse your beef chuck stew and pat dry. Season with salt & black pepper (to taste) and coat in all purpose flour. Ensure each piece is evenly coated in flour. Place your pot on medium/high and warm for 1 minute. Add your oil and heat the oil for 2 minutes. Next add the beef and fry until it turns deep brown. It will take approximately 20 minutes to achieve this. The beef will release liquid, continue frying, and continue stirring until all pieces are equally browned and until all liquid has evaporated and only oil remains. Remove the beef and set aside.
Next, lower your flame to low/medium and add chopped celery, carrots, chopped onion & fresh garlic, tomato paste, and dried seasoning. Sauté for 1-2 minutes. Add Guinness and beef broth. Drop your bay leaves and return the beef to the pot. Cover and simmer on stove stop for 90 minutes or slow cook for 2 hours on 250 degrees. Serve with your favorite side and enjoy!
