The Chinese restaurant on the corner of Utica Ave and Snyder Ave in Brooklyn were famous for having the best tasting fried chicken wings. If you were having a party or just needed a quick fix, Snyder wings was it!

The method of cooking these fried chicken wings is different from your traditional fried chicken wing recipe. Chinese fried chicken wings involve coating the chicken in seasoning, adding cornstarch and flour, and frying the chicken twice. You can pre-fry the chicken wings ahead of time and fry them again when you’re ready to serve them, or simply let the chicken wings rest for a few minutes, and fry them again immediately afterward.
What should I serve with fried chicken wings?
Classic Chinese takeout style fried chicken wings is usually served with fried rice or french fries. A delicious roast pork fried rice or vegetable fried rice would go great with these fried chicken wings. I recommend grabbing a package of frozen vegetable fried rice from Trader Joes and adding a teaspoon of chow mein seasoning to jazz it up. Growing up, after school, my friends and I would order 2 fried chicken wings & french fries with ketchup & barbecue sauce or ketchup and hot sauce! We’d walk home from school with our fried chicken wings dripping in sauce and a smile on our face!
Ingredients
-3.5 lbs of chicken wings (washed & pat dry)
-1/2 tsp Garlic Powder
-1/2 tsp Black Pepper
-1/2 tsp White Pepper
-1 1/2 tsp salt
-1 tsp sugar
-1 tbsp Shaoxing Wine
-1 tsp Low Sodium Soy Sauce
-1 tsp Rice Vinegar (optional)
-1 tsp Sesame Oil
-2 tbsp Cornstarch
-2 tbsp All Purpose Flour
-6 cups of oil for frying
Directions
Wash your chicken wings and pat dry. In a medium sized mixing bowl, combine chicken wings, black and white pepper, salt, sugar, shaoxing wine, soy sauce, sesame oil, corn starch, and all purpose flour. Massage ingredients into the chicken until well combined. Marinate for 1 hr. Heat 6 cups oil on medium-high heat for 5-7 minutes. 325 degrees Fahrenheit is the perfect temperature for frying chicken. Slowly add chicken to the pan and deep fry for 10 minutes. Do not add too much chicken at once. I recommend frying 7 chicken wings at a time. Set all wings aside to rest on a cooling rack. Your wings may have a light colored appearance and that is normal. Once the chicken has cooled to room temperature, fry them all again, this time for approximately 5-7 minutes or until they are nice and golden brown. Let them drain and cool on your cooling rack and serve with your favorite sauce.
