Easy Black Beans and Rice Recipe

October 9, 2023 By The Cooking Nurse No Comments

It’s a weekday and you want black beans and rice but you don’t have 3 hours to dedicate. What do you do? Trust me, I’ve been there. If you’re looking for a quick and easy black beans and rice recipe then this recipe is what you’re looking for. It’s ready in 30 minutes tops, is full of flavor, and a great addition to your meal.

What do I need to make easy black beans and rice?

This simplified version of black beans and rice requires 1 can of black beans, scallion, thyme, green seasoning, 1/2 red bell pepper, a scotch bonnet or habanero (optional), salt, olive oil, and jasmine rice. The next time you go grocery shopping, add these to your grocery list!

Ingredients

  • 1 can of Black Beans
  • 1 tbsp EVOO
  • 1 tbsp green seasoning
  • 1 tsp salt
  • 2 cups Jasmine Rice
  • 1/2 Red Bell Pepper
  • 1 Scallion
  • Few sprigs of thyme
  • 1 Scotch Bonnet or Habanero pepper (optional)
  • 2 cups of Water

Directions

Place a medium sized pan (make sure it has a lid that fits) on low medium heat. Heat the pan for 2 minutes and add olive oil. Heat for 2 minutes and add green seasoning. Sauté for another minute and add your can of black beans (along with the liquid that’s in the can). Add water, stir, and then add salt, scallion & thyme, and pepper. Cover and cook for approximately 20-25 minutes. You will need to stir occasionally to ensure rice is evenly cooked. Serve and enjoy!
