Better-Than-Takeout Easy Jerk Chicken Fried Rice

Jerk Chicken Fried Rice

What type of rice should I use?

The best type of rice to use for this better than takeout jerk chicken fried rice is day old, cold, cooked Jasmine rice. You can use leftover rice from the day before, but it’s best to use cold rice so that your dish doesn’t come out too mushy or sticky.

What Ingredients will I need?

You’ll need a diced chicken cubes, or you can use chicken thighs if you please. To season the chicken you need all purpose seasoning, onion & garlic powder, and a wet jerk seasoning. You’ll also need an egg, vegetable or canola oil, hoisin sauce, fish sauce, oyster sauce, soy sauce, hot sesame oil (optional), and frozen peas & carrots

Chicken fried rice is such an easy do-it-yourself meal that makes excellent leftovers. You can add in whatever vegetables you’d like and customize it to your liking.

Jerk Chicken Fried Rice

Ingredients

-1.5 lb of diced chicken breast or 2 lbs chicken thighs

-1 tsp All purpose seasoning

-1 tsp Onion Powder

-1 tsp Garlic Powder

-2 tbsp mild or spicy Jerk seasoning (use wet paste)

-2 1/2 cups Jasmine Rice

-1 egg

-1 tbsp Canola or Vegetable Oil

-1 cup Frozen Peas & Carrots

-2 tbsp Low Sodium Soy sauce

-1 tbsp Fish Sauce

-1 tbsp Oyster Sauce

-1 tsp Hoisin Sauce

-1/2 tsp Hot Sesame Oil (optional)

Directions

Begin by seasoning your chicken. Rinse first and pat dry. Add your all purpose, onion & garlic powder, and jerk seasoning. Massage into the chicken and set aside. Place a large frying pan or wok, I recommend this one: https://amzn.to/3JIw2wz on medium heat and hear the pan for 2-3 minutes. Next add your oil and heat the oil for 2-3 minutes. If using diced chicken breast, add to the pan and cook evenly on all sides for 15 minutes. If using chicken thighs it may take up to 25 minutes. Set aside.

Once you’ve set the chicken aside, add your egg and sauteé the egg for 1-2 minutes. Next, add your rice and frozen peas and carrots. Sauteè for 2-3 minutes. Add soy sauce, fish & oyster sauce, hoisin sauce, and hot sesame oil. Be careful with hot sesame oil! It’s extremely potent. Continue to stir for 2 minutes, add your chicken to the pan, continue stirring for another 2 minutes and enjoy!
