Red Stripe Infused Honey Jerk Wings

Guys! There’s a new product on the market! If you’re anything like me, I’m a sucker for anything labeled “New!” On July 30 of this year, Walkerswood launched a new collaboration alongside Red Stripe to bring us a one of a kind beer infused jerk marinade to take your favorite jerk dishes up several notches!

The Use of Beer in Grilled Chicken

This is a genius idea. Red Stripe, a long time staple of Caribbean culture with it’s iconic red and white labeled lager is teaming up with one of the leading jerk seasoning brands. It’s a match made in heaven. Traditional jerk chicken, done inside of a drum outdoors has always included a last minute dousing of Red Stripe to lock in the flavor. Now, with the introduction of this product, the two concepts merge to create a convenient experience for the consumer.

What Does it Taste Like?

A word of advice, anytime you’re trying a marinade for the first time, taste it before you use it. Therefore, you know exactly what direction you want to go in as far as seasoning. As soon as the bottle is opened, the smell of the beer infusion is noticeable. The taste is slightly tart, definitely spicy, and the flavor of authentic jerk seasoning is immediately present. Keeping this in mind, I decided the addition of honey to the recipe would do great at toning down the spice. After all, the kids would need to enjoy these wings as well!

These were so delicious. It’s not an exaggeration. These wings came out fantastic and I can’t wait to try this marinade on other protein and vegetables. I had some fresh corn left over and decided to use it to make seasoned boiled corn. I also added a few teaspoons of this beer infused marinade to a pot of coconut milk, a chicken flavored soup packet, thyme, scotch bonnet pepper, water, and butter. The recipe for the seasoned boiled corn calls for the use of scallion, but scallion wasn’t available. I swapped in a tablespoon of green seasoning.

Where Can You Purchase this Jerk Marinade?

As of right now, this is a limited edition seasoning available in select stores across Jamaica. No word yet on when this seasoning will be available in the USA or the UK, but I’m sure if there is enough interest, they’ll consider nationwide distribution in the USA and/or the UK!


Ingredients

•2.5 lbs of Chicken Wings (18 wings)

•3 tbsp of Green Seasoning (you can omit if you haven’t prepared Green Seasoning)

•1 tsp All Purpose Seasoning

•1 tsp Chicken Seasoning (or half of chicken bouillon cube)

•1 tsp Dry Jerk Seasoning (powdered jerk seasoning)

•1/2 tsp Onion Powder

•1/2 tsp Garlic Powder

•1/2 tsp Old Bay Seasoning

•1 tsp Paprika

•5 tbsp of Walkerswood Red Stripe Infused Jerk Marinade (since this product isn’t available yet in the USA, I’d recommend you making your own infusion using 1 cup of Walkerswood jerk marinade and 1/4 cup of Red Stripe Lager. Stir well and store refrigerated)

•3 heaping tbsp Walkerswood mild Jerk seasoning (you can use spicy, but only if you’d like your wings very spicy)

•6 tbsp Honey

Instruction:

Preheat your oven to 375 degrees Farenheit. Wash your wings and pat dry. Add all seasonings and massage them into the chicken. Arrange them in an oven safe dish and place the chicken into the oven uncovered. Cook for 1 hr 30 minutes. Be sure to baste the chicken with it’s juices every 30 minutes to prevent it from drying out. After 1 hr 30 minutes, drizzle the honey on top of all wings and place back into the oven for another 10 minutes. Remove and enjoy!
